Merfs Guajillo & Amber Ale Hot Sauce

This Merfs Guajillo & Amber Ale hot sauce, also called Angry Elk, is a collaboration with a local beer brewer. Roasted peppers form the base of the sauce and that is combined with Angry Elk Amber Ale from Lariat Lodge Brewing Co. The use of Guajillo and Chipotle Meco peppers makes it a delicious smoky, peppery hot sauce that is rounded off by the smooth malt of the beer. Finally, apple cider vinegar provides a nice acidic touch. A very good hot sauce for (birria) tacos, barbacoa, Tex-Mex cuisine, but also as a marinade for game meat.

    Moderate heat, the amount of smokiness is absolutely perfect. For me a felt a bit of a cherry in the taste.

    A quite good sauce, a bit runny and translucid with chunks in it. flavour is really good with a light smoke taste and a light level of heat. Definitely recommended with red meat, pepperoni pizza and a pint of ale.

    Heat 2/10
    It’s advertised as pretty hot on the bottle’s label but I didn’t feel the heat at all. I tried it a couple times and the only time I got that 2/10 feeling is when I ate it all by itself with a clean palate. The heat fizzes out quite fast.

    Texture
    Watery. This brought the sauce waaay down for me. I expected it a bit since it’s advertised as an ale/beer type thing. But seeing the bits in the translucent sauce really didn’t do it for me.

    Flavour 4/10
    This was pretty disappointing for me. There’s definitely an ale flavour that surfaces but for me it didn’t seem to be a cohesive flavour. Nothing really fit perfectly. I’d expected a more smokier, tangier taste, but it falls flat on its sides. Doesn’t excel at anything in particular. Probably works best with freshly BBQ’d meats. All tests were done with the sauce COLD pulled out of the fridge for maximum not-liquidy-texture in mind.

    I mean, if you’re a fan of beer or ale related sauces you might really enjoy this but it really wasn’t IT for me. Texture was not great and I could chalk all that up to a bad batch or something but take that with a grain of salt. Good if you don’t like super spicy sauces.
